California Light and Fluffy Mashed Potatoes Recipe

Ingredients:
3 pounds baking potatoes -- peeled and cut in 3" chunks
2 tablespoons unsalted butter
3/4 cup skim milk
1 cup plain nonfat yogurt
1/2 teaspoon salt
1 pinch white pepper
1 tablespoon chopped fresh chives

Directions:

Immerse potatoes in cold water for 5 minutes to remove excess starch.

In large pot of boiling salted water, cook potatoes for about 15-20 minutes or until fork-tender. Drain and return to pot. Over high heat, dry potatoes by tossing them occasionally for about 1-2 minutes until all the moisture has evaporated.

Put potatoes through potato ricer or mash with a potato masher in a large mixing bowl. In a medium saucepan over medium heat, combine butter and milk and bring to a simmer. Pour over potato mixture and blend well. Add yogurt, salt, pepper and chives and blend well into potatoes. Taste for seasoning. Transfer to serving bowl and serve immediately.
