Ingredients:
9 Eggs
1 cup Milk
1/2 teaspoon Nutmeg and dried oregano
1/4 teaspoon Each salt and pepper
1 3/4 cup Shredded Cheddar cheese
1/4 pound Cream cheese, cubed
2 teaspoons Vegetable oil
2 small Onions, chopped
4 cloves Garlic, minced
1 package (10 oz. size) frozen spinach, cooked, drained and chopped
6 Cherry tomatoes, halved
***GARNISH***
Sweet red and yellow peppers
Sliced red onion and chives

Directions:

In large bowl, whisk together eggs, milk, nutmeg, oregano, salt and pepper; stir in Cheddar and cream cheese. In small skillet, heat oil over medium-high heat; cook onions and garlic for 2 to 3 minutes or until softened. Stir into egg mixture along with spinach.

Pour into greased 6 cup tree mould or 8-inch square baking dish or 11- x 17-inch baking dish. Bake in 350 F (180 C) oven for 40 to 50 minutes or until puffy, golden brown around edges and set in centre. Decorate with cherry tomatoes, sweet pepper cutouts, red onion "garland and chive "candles."
