Ingredients:
2 pounds ground beef
1 cup cracker crumbs
1/2 cup chopped onion
1/2 cup chopped celery
2 eggs -- beaten
1/2 cup grated Parmesan cheese
1 1/2 teaspoon salt
1 teaspoon oregano
1 cup milk
15 ounces pizza sauce
1 cup shredded Mozzarella cheese
4 ounces sliced mushrooms -- drained
Bell pepper -- sliced into rings

Directions:

Mix first 9 ingredients and shape into loaf pan. Bake for 1 hour at 350F degrees. Remove after 1 hour and pour off grease. Pour pizza sauce over meat loaf. Sprinkle with Mozzarella cheese; then with mushrooms and bell pepper rings. Bake 15 minutes more.
